Living with Celiac disease means something most people never have to think about:
That food—something so ordinary, so everyday—
can become dangerous.
Not in a dramatic, obvious way.
But in quiet, invisible ways that affect everything.
Where you go.
What you eat.
How safe you feel.
For me, it meant constantly navigating a world that wasn’t built with this in mind.
Reading every label.
Asking every question.
Explaining—again and again—why it matters.
And still, sometimes…
Getting it wrong.
At some point, the question shifted from:
“How do I manage this?”
To:
“What would it look like to actually feel safe?”
That’s where Barley comes in.
A gluten-detection service dog.
Not just for convenience.
Not just for peace of mind.
But for something deeper:
Freedom.
One dog. One journey.
One movement toward making the invisible visible.
But the deeper I got into this journey, the more I realized something else:
This wasn’t just my story.
There are so many people living with hidden disabilities—
conditions that aren’t obvious, but impact every part of daily life.
And so many of them are navigating it alone.
Without support.
Without understanding.
Without a clear path forward.
And then the bigger question came:
What if this wasn’t just about bringing one dog home?
What if this could become something more?
Something that helps others find:
support,
resources,
community, and
a way forward
That’s how Access Unleashed began.
Not as an organization first.
But as a calling.
To make the invisible visible.
To connect people with real, tangible support.
To create a path where there wasn’t one before.
Because this isn’t just about a dog.
And it’s not just about me.
It’s about every person who has ever felt unseen in what they’re carrying.
And this?
